Clean fish, season with salt and pepper, dredge with flour, place in Criscoed baking pan, pour over tomatoes, and dot with Crisco. Bake in a moderate oven, basting often.
Take halibut steak an inch and a half thick. Wipe dry, sprinkle with salt, and brush it over with soft butter. Broil over a clear fire until both sides are nicely browned. Place it on a hot platter, garnish with slices of lemon and parsley, and serve with sauce piquante.
French fried potatoes and baked tomatoes are a good accompaniment.
